EGGPLANTS SALAD RECIPE

To make this delicacy we will need onions, garlic, tomatoes, olive oil, ground pepper, ground cumin, sugar, salt and, of course, eggplants. Cut the onions in julienne and simmer with the olive oil until soft.

Then add the peeled, seedless tomatoes, chopped garlic, and sugar. Simmer until the preparation turns out to be a jam. Roast the whole eggplants in the oven, peel, dice and add to the sofrito along with the pepper, ground cumin, and salt.
