Broccoli Cheddar Stuffed Chicken Breasts

INGREDIENTS:

  • 2 boneless chicken breasts (fairly large and thick)
  • 2 cups broccoli
  • 1/2 cup grated cheddar cheese
  • 1 cup breading
  • 2 eggs
  • 1/2 cup flour

PREPARATION:

STEP 1
Steam the broccoli for 5 minutes. Meanwhile, grate the cheese. Once the broccoli is cooked, put it in a bowl, add the grated cheese and break up the broccoli by crushing with a fork. The cheese will melt and mix with the broccoli.

STEP 2
Preheat the oven to 350°F. Cut the chicken breasts in half if they are very long. Make an incision, being careful not to puncture or over-untie the chicken breast. Stuff the chicken with the broccoli and cheese mixture.

STEP 3
Beat two eggs in a bowl (if desired, add a drop of oil to prevent the breading from burning). Put a little flour in a bowl (or plate) and breading in another bowl. Dip the chicken breasts in the flour, then in the eggs and finally in the breading.

STEP 4
Place the breasts on aluminum foil on a baking sheet. Bake for 30 minutes.
